Green Chilli Cornbread




I Found this photo amongst the archives and have spent the last hour flicking through my stack of notebooks and make shift recipe books to find the actual recipe. 

This is the downfall of writing down recipes on what ever surface is readily available and haphazardly "filing" them in the back of my notebooks. If i'm feeling really organised, they might even be designated a page in the notebooks! Even then they are hidden amongst thousands of quotes, to do lists and ramblings its virtually impossible to find anything when you need it. I have searched high and low to no success, but I think i can remember how it goes, the important bits any way. 

I do remember it was spicy. I remember it had heaps of cheese AND bacon. Therefore it must have been good.

Recipe:

2 cups medium cornmeal
2 cups white flour
4 tsp baking powder 
1 tsp salt 
1 1/2 tbsp raw sugar
2 green chillies chopped
1 cup grated cheese
1/3 cup bacon pieces 
1/2 cup corn kernals 
50g butter melted 
1/2 cup sour cream
enough milk to combine

Preheat oven to 170 degrees.
Mix in all of the dry ingredients. 
Chop bacon and fry until golden.
Stir into the dry mixture with all remaining
 ingredients minus 1/4 cup of cheese.
Tip into a greased cake pan top with remaining cheese
and cook for 20 mins or until golden and
cooked through. 

Serve hot with loads of butter.
